Crunchy Broccoli Salad

I made this salad for Father's day and everyone absolutely loved it! I can't wait to make it again.

Crunchy Broccoli Salad

1 head romaine, chopped
1 bunch green onions, sliced
1 large head broccoli, cut into small pieces
1 pound bacon, cooked and cut into small pieces
2 (3 ounce) packages Ramen noodles, crushed. Discard seasoning packet
4 Tablespoons butter, melted
1 cup pecans chopped or sliced almonds

Mix butter, nuts and crushed noodles. Spread on a cookie sheet and back at 350 degrees until lightly browned, stirring occasionally. About 10 minutes. Set aside to cool completely.

Add broccoli, onions, lettuce, bacon and noodle/nut mixture in a large bowl. Toss with dressing right before serving.


1 cup vegetable oil
1/2 cup red vine vinegar
1 cup sugar
1 1/2 Tablespoons soy sauce
salt and pepper to taste

  3. Yum! Didn't have any bacon on hand so I marinated some chicken tenders in a bit of the dressing, grilled them and served on top. I also added some mandarin oranges. Another Jane hit!

  5. I made this for my mother's retirement party, as a side dish.
    I absolutely LOVED it!!!!
    I used the "honey" sliced salad almonds, that are in the salad dressing section and 3 Ramen noodles, with one packet of the oriental seasoning!!

  7. this salad got my husband to eat broccoli! I added some chili powder and cinnamon to the nuts and noodles before they went in the oven. Great salad!
