banana chocolate chip pancakes w/ PB syrup

I thought these would be fun to make for my kids in place of our usual Sunday pancakes. They were so good, very rich. The kids loved them. I saw them at Our Best Bites.

Chunky Monkey pancakes with Peanut butter syrup

1 1/2 cup flour
3 Tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
1 tsp vanilla
1 Tablespoon oil
1 large egg
2 small to medium ripe bananas
1/4 cup mini chocolate chips tossed with 2 teaspoons flour.

1 cup maple syrup
1/2 cup peanut butter

In a medium sized combine flour, baking powder, soda and salt with a whisk. In a separate bowl, mix buttermilk, vanilla, oil and egg. Add wet ingredients to the dry ingredients until just combined. Do not overmix. Mash bananas with a fork and fold in bananas and chocolate chips. (tossing them with flour will prevent them from all sinking to bottom of bowl).

For syrup:

Microwave peanut butter for 30 seconds, add maple syrup and stir to combine.

Heat skillet to medium heat and coat with cooking spray. When batter bubbles, flip pancake and cook other side.
