Bruschetta

Here is another appetizer for Superbowl. It can be thrown together quickly and if you like sun- dried tomatoes and fresh basil, this is for you. I toast the slices ever so slightly, I like soft, chewy bread as opposed to a crunchy bruschetta. These are like fancy little pizza bites.



Sun Dried Tomato Brushcetta



1 small, soft baguette
3 Tablespoons olive oil
¼ cup sun dried tomatoes
2 garlic cloves
1 Tablespoon balsalmic vinegar
¼ teaspoon salt
¼ teaspoon pepper
3 to 4 large basil leaves, chopped
2 roma tomatoes, chopped
1 cup shredded mozzarella cheese

Slice bread and toast lightly under broiler for a minute or so. Combine oil, sun dried tomatoes, vinegar, salt, pepper, garlic and basil in a microwave proof bowl. Microwave for 1 minute, until fragrant. Brush mixture over toasted bread slices, top with fresh roma tomatoes and then mozzarella cheese. Place under broiler again until cheese is slightly browned and bubbly.
