1 cup long grain rice
2 TBS olive oil
1 small can tomato juice
2 cups chicken broth
1/4 tsp garlic powder
1/4 tsp cumin
Heat oil in skillet and saute rice until a light tan color. Add cumin, garlic, tomato juice and broth. Bring to a boil. Reduce heat, cover and simmer for 20 minutes. Add salt and pepper to taste.
