Spinach Salad I



Spinach Salad

1 bag spinach, washed and drained
1 can water chestnuts, drained and chopped
1 can bean sprouts, drained
3 hard-boiled eggs, sliced
1/2 lb. bacon, fried and crumbled
1 large red onion, cut in thin slices

Dressing:

1 cup salad oil
3/4 cup sugar
1/2 cup dark vinegar (I used red wine vinegar)
2 tsp salt
1/2 cup ketchup

Toss spinach, chestnuts, and sprouts. Add bacon, eggs and onion. Blend dressing ingredients and pour over salad just before serving. Serves 10.
