Lasagna


This is my very favorite lasagna recipe. I have tried several good recipes because I love to try new recipes and am open to new favorites. I always go back to this one. It is from The Lion House and it is absolutely delish. The sauce alone would be great for spaghetti too.

Lion House Lasagna

1 1/2 lb ground beef (I usually just use 1 pound)
1/2 Tbs Oil
1 clove Garlic
1 Tbs parsley
1 Tbs basil
1 tsp salt
1 large or 2 small cans diced tomatoes
6 oz tomato paste
10 oz lasagna noodles
3 cups cottage cheese
2 eggs beaten
1/2 tsp pepper
1 Tbs parsley
1 pound Mozzarella Cheese
1/2 cup parmesan cheese


Brown ground beef in oil, drain and add garlic,parsley,basil, salt, tomatoes, tomato paste. Simmer up to one hour. In a separate bowl, mix cottage cheese, eggs, parsley, pepper and parmesan.

Layer 1/2 the noodles, 1/2 the cottage cheese, 1/2 mozzarella, 1/2 of the meat, rest of the noodles, cottage cheese, meat then mozzarella.

Bake at 375 degrees for 30 minutes. If you make ahead and refrigerate be sure to add 20 to 30 minutes to cooking time.

Tip:

I use these noodles, they are great - you just layer them in the lasagna uncooked and they come out perfect. It really is an easy dish to make when you use these. The hardest part for me was grating the cheese.



Also, the recipe doesn't call for it, but I usually sneak in some Fennel. Fennel is one of my favorite spices and I usually add it when making marinara. You can use whole fennel or powder, I have and use both.
