Hot Chocolate Cookies


I have not blogged in a while and have many recipes to post. This one gets to be first in line because they are SO darn good. They just may be my new favorite cookie, or at least in the top three! I had my husband take all the extras to work but next time I am going to hide them in the freezer and enjoy them all to myself.


Hot Chocolate Cookies



2 sticks softened butter
1 cup sugar
⅔ cups brown sugar
2 large eggs
1 teaspoon vanilla
3-¼ flour
4 packets hot chocolate mix
1 teaspoon salt
1-¼ teaspoon baking soda
1 cup Each White, Milk, And Semi-sweet Chocolate Chips
mini marshmallows

Cream butter and sugars until smooth. Beat in eggs and vanilla until combined. In a separate bowl, combine flour, hot chocolate mix, salt and baking soda. Add to wet ingredients until well combined. Fold in chips. Chill the dough for about an hour. Scoop dough onto baking sheets lined with parchment paper. Bake at 350 degrees for 9-11 minutes or until edges are golden brown. During the last couple minutes of baking add marshmallows to the tops of the cookies. Let cool for 5 minutes before removing from pan.
